Description
Beef shank is a cut of meat from the lower leg of a cow. It is a tough, flavorful cut that is best cooked through slow methods such as braising or stewing. It is often used in dishes such as beef bourguignon, osso buco, and pho. Because of its toughness, it may require a longer cooking time, but the results are tender and flavorful meat.

This is Victoria’s oldest site of volcanic activity and you can see it in the fertile red soil. Importantly, our ranch is in the rain belt so there is plenty of fresh water for livestock and growing our own green forage and hay.
